Anti-inflammatory afternoons!

Anti inflammatory foods are the perfect way to help prevent the symptoms of colds and flu’s as well as promote joint health and recovery after exercise.

 Grain and Seed Cookies

Makes 20 cookies

Preparation time: 10 minutes               Cooking time: 12-15 minutes

Ingredients

1 cup rolled oats

¾ cup self raising flour

¼ cup raw quinoa

¼ cup sunflower seeds

¼ cup pepita seeds

¼ cup almonds (chopped)

¼ cup macadamia nuts (chopped)

2 tablespoons chia seeds

½ tsp ground cinnamon

2 tablespoons coconut oil

1 tablespoon macadamia oil

¼ cup peanut butter / other nut butter of your choice

¼ cup rice malt syrup

½ tsp vanilla essence

Method:

  1. Pre-heat oven to 180o
  2. Combine the dry ingredients in a medium mix bowl and make a well in the centre of the mixture
  3. Place the oils, nut butter and rice malt syrup in small saucepan and stir over a low heat until all the ingredients are combined. Remove from heat and add the vanilla essence.
  4. Pour the wet ingredients into well in the dry ingredients and stir to combine everything together.
  5. Bring together tablespoon size portions of the mixture, roll into a ball and slightly flatten on a lightly greased baking tray. Bake for 10-15 minutes or until the cookies are golden on top. Once cooked, remove the cookies from the oven and cool on a rack for 5-10 minutes.
